Easy Red Thai Curry Shrimp

Image
Easy Red Thai Curry Shrimp ~ it's a flavor sensation that your pallet will adore and it's so easy to make! I have been looking through older posts for dinners I have wanted to make again that got overshadowed by having to keep current and new posts going. As I looked at them I decided to remake a dish and see if I couldn't make some adjustments as well as grab new photographs. This recipe is fabulous. It makes a lot and feeds six people so it kind of negates that it would be an expensive entree. Read more »

Key Lime Ice Cream Sodas

Image
This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #EasterMadeEasy #CollectiveBias Key Lime Ice Cream Sodas ~ The taste of lime is captured in this refreshing springtime ice cream soda! I associate spring with Easter and vice versa. Growing up (in a Catholic household) Easter also meant getting new clothes, hats and shoes for Easter Sunday. There was the coloring of eggs (for the Easter Bunny to hide), daffodils and other spring flowers began to bloom and we would be spending Easter Sunday with family and extended family. With Easter just around the corner I am looking forward to spending time with family in Massachusetts. I was asked to make dessert and wondered about a layered cake, however traveling by car for two and a half hours I worried the dessert might take a spill and look shipwrecked by the time we got there. Beef Basics

Image
From choosing the right cut of meat, cooking techniques and all the way to making delicious homemade gravy, this post covers it all. The first in the series of "Basics" was Potato Basics where I presented you with a few different ways to make potatoes and with cooking techniques and the links to recipes. Today I thought I would do this series based on beef. Face it, beef isn't cheap these days (well not much is) and if you spend a fair amount of money on a roast or steak the end result better be a great tasting piece of meat! Read more »

Middle Earth Lentil and Kielbasa Casserole

Image
Inspired by Tolkien's "The Trilogy" comes a dish from a dear and long time friend Kathy. It seems like only yesterday we were winding our way through the shire hanging out with Bilbo and Frodo Baggins taking a three book journey through Middle Earth. Spell bound by every page we read, Kathy and I could not wait for our next tea session to discuss the happenings, taking care that neither of us spoiled it for the other. You see Kathy had actually already read the book and me, well as usual I was one step behind and she decided to re-read it while I was reading it for the very first time. I was so excited to read it that I went to our nearest local bookstore and purchased a beautiful hard copy set that I just passed along to my youngest son. Read more »

Corned Beef in a slow cooker comes out beautifully. We love this protein and look for special prices throughout the year. It can be tough if you do not slice it correctly. You must slice it against the grain! For my Corned Beef and Cabbage recipe, just follow the link. Have a wonderful celebration and meal with family and friends.

Turkey Meat Loaf with Sage Gravy

Image
Moist, tender Turkey Meat Loaf  triggers the smells and feelings of Thanksgiving ~ in a lot less time than it takes to put together a Thanksgiving meal. Meat loaf is one of those things that I have to be honest about. I've not mastered a great meat loaf. I made a version of my mother's and I thought it was okay, but the family didn't like it. As soon as they spotted me adding sour cream to it they already had formed their opinion. I tried again about four weeks ago using beef and attempting to make it like my employee did at my to go food restaurant using a bottled barbecue sauce. That was an epic fail and I tossed it out. I didn't think I would ever again attempt meatloaf until I found this Williams-Sonoma recipe for turkey meat loaf. Read more »

Sweet & Sour Baby Back Ribs

Image
Sweet and Sour Sauce is the beginning of something good! These ribs are the end result after making my Sweet and Sour Sauce which was just published. We loved straying from traditional rubbed and or barbecue sauced ribs. Cooking them in a low oven with a bit of liquid and wrapped in foil made these ribs tender and juicy, yet there was still a little give to the meat. Some folks in the barbecue world insist on falling off the bone meat, while the others consider tender yet with a give. It's actually all up to you which way you prefer your ribs. Read more »
