Summer Saute

  Summer Saute is the easy and perfect side dish to any grilled or roasted summer meal.  This dish I credit my wonderful sister-in-law. She made summer sauté  for a gathering many years ago and I have made it a number of times through the years since I first got her recipe. It's incredibly easy and takes about 20-25 minutes to cook. I use yellow squash, however, zucchini or a combination of yellow and zucchini would work as well. 2-3 summer squash (or zucchini, or combo of) 1 lrg. green bell pepper 1 lrg. onion 2 large fresh tomatoes  1 tbsp. butter 1 tbsp. olive oil or canola or vegetable oil salt and pepper to taste 1/4 cup water Start by prepping all of your vegetables: I peel my yellow squash but you don't have to. Then I cut it in rounds. Peel your onion. Slice it in half then make half moon slices for the whole onion. De-seed and devein your bell pepper and cut into strips. Cut the tomato in wedges. Sno Peas and Mushrooms

Sno Peas and Mushrooms are a delightful combination in this simple side dish recipe for healthy, lighter eating! These are two vegetables I really adore. And, when paired together are so delicious. Whether you add them into a stir fry meal or simply pan saute, this combination is a winner. I have also made them with a touch of soy sauce as a vegetable side dish, but tonight I just wanted something light, something crunchy and something delicious. Fragrant and aromatic smells crisscrossed throughout my downstairs and I could not wait to dive into this Roasted Vegetable Medley! I am a firm believer in using what you have available to create something new. My last trip out to the store I picked up asparagus on sale and some red potatoes thinking I would use the red potatoes in a potato salad to eventually go along side some pork ribs. This morning I was inspired to create a side dish for the dinner we are having tonight ~ Shake 'n Bakish Style Pork Chops . In less than 20 minutes you can have this beautiful and delicious and super quick side dish ready for your family. Zucchini still manages to be one of the least expensive vegetables in the market today. It cooks quickly and is a blank canvas for you to work with by adding a few spices and like this dish, some Parmesan cheese. Lighter Fresh Green Bean Casserole

Fresh green beans, caramelized onions and a deliciously light sauce blend together for one fantastic and more modern green bean casserole. I took an existing recipe and gave it a make-over. Ultimately it's lighter because I did away with the heavy cream and some of the butter. The flavor however has not been compromised, this green bean casserole is scrumptious. The other plus is the ease of it and that it's all homemade. No canned stuffed here! Read more »
