Shrimp Pasta Salad

Simple, easy, lightly dressed pasta salad with shrimp and it's perfect for summertime picnics! New England weather is totally nuts! We went from the furnace kicking on on Monday to the temperatures soaring to ninety degrees on Wednesday. My husband went from layered clothing to a tee-shirt for work. With the weather change we also are changing what we eat. Personally I am tired of cooking and eating beef, pork and chicken and have been craving seafood. On Tuesday I picked up two beautiful cod loins to make my Herb Crusted Cod Loin dinner. Originally made for a holiday gathering back in December of 2013, these Quick and Easy Cream Cheese Tarts are perfect for any gathering throughout the year. Today is the Preakness which is the second race for three-year-olds held at Pimlico Racetrack in Baltimore. It's the second race of the Triple Crown. Easy and fast weeknight combination that you and your family will thoroughly enjoy. When I was out there like you working full time with youngsters getting a good meal on the dinner table was really important to me. Yes we occasionally went for a pizza, but in general I've always wanted a well rounded dinner for the family. May is National Burger Month ~ but you probably knew that already. I've come up with a super burger to celebrate and it's over the top delicious! Penne a la Vodka with Peppers

A classic American-Italian style dish with a bit of a twist, Penne a la Vodka with Peppers is hearty and oh so delicious! The classic version of Penne a la Vodka has heavy cream but I've left it out of this recipe. I am trying to loose some weight before my son's wedding so it's imperative I trim wherever I can when cooking. It actually tastes really great without it so I did not miss it at all. If you are worried about feeding kids, there's very little vodka in the recipe and the alcohol gets reduced down. Read more »

Roasted Corned Beef with Sauerkraut

The corned beef is slow roasted to perfection and the sauerkraut adds a nice tang to the dish. Corned beef happened to be on sale a few weeks ago so I picked up a small one for my husband and I. I did a little research and decided that I would try oven roasting it versus my normal crock pot method of cooking. This was done on a wing and a prayer ~ hoping like all get out that it would turn out good. And the aroma that filled my entire house indicated that it just might be super delicious. Read more »
